Hello Gigglelotbirds. This is Diane coming at you once again with another one of my BlogVlogs. This time it is about Cooking In The Kitchen with Diane and Belen. I hope you enjoy reading this and watching my blogvlog post and I will be adding the quick fast and easy recipe.

In my family we love to cook up a storm and we love to use our moms and grandma’s old recipe’s. However; sometimes it takes all day just to prepare what will be gone in minutes once your entire family devours it. Sometimes moms work all day and is to be expected to cook once they are home. So sometimes we have to take the short cut that only takes minutes til the food your cooking or baking is done, but it’s still delicious and fulfilling.

So down below I have posted pictures and ingredients of the recipe of what you will need to get started.

The Recipe:

The Ingredients:

One large pan, Vegetable oil, Flour, Salt, Chili powder, one pack of taco seasoning, one pack of corn tortillas, and Shredded cheese or the squares or both.

One large pan for the enchiladas to bake in
Pour half cup of oil
Half cup of flour to make the roux
Add chili powder for taste
Add salt for taste
Add one whole pack of taco seasoning
My favorite corn tortillas Mission
My favorite brand of shredded cheese Crystal Farms
Kraft Cheese or Borden’s whichever you prefer

Heat large pan, pour half cup of oil, and about half cup of flour to make the roux. You mix both together til it starts to brown. You can add more oil and flour because you’ll want to make enough roux which is the start of making the enchilada sauce.

Add chili powder for taste and add about 2 cups of water, add salt for taste, add 1 whole pack of Taco seasoning. Stir until it’s the consistency you want.

This is the recipe for the enchilada sauce.

Mix the ingredients together til it starts to brown

Now it’s ready

Then just put it together as you see in the pictures below. It won’t take long to bake in the oven. Just preset your oven at 350 degrees. It should take about 30 minutes or until golden brown for the enchiladas to be ready. I have a video for this that I have posted on YouTube and I will post it here as well.

Take the corn tortillas and dip it in the sauce

After that put the pan in the preheated 350 degrees oven

And in about 30 minutes or until golden brown dinner is served

This is a very quick and easy way to make fast Enchiladas. A favorite Mexican dish that my mom and grandma use to make but the hard way, by scratch. I have a video of Cooking in the Kitchen with my sister, Belen on my YouTube channel Gigglelotbird67.

As for the sides just use instant rice any favorites you have will do just fine. Just follow their directions and it should be ready in minutes to enjoy eating with the enchiladas. Or you can make it by scratch, which ever is easiest and fastest.

Use instant rice of your favorite choice that will be ready in minutes
Or cook it by scratch
Don’t forget to add these vegetables to your rice if you make it by scratch
